Dairy Substitute Recipes - Using DariFree, NotMilk, NotMilk LowFat or Flavor-Fresh
Softserve Ice Cream
200 ml liquid Vances DariFree (Regular or Chocolate flavour)
one 400 gram (14 ounce) package soft tofu (your favorite brand)
1 cup of sugar (or equivalent honey or sweetener of choice)
flavouring of your choice if desired and appropriate for diet (extra chocolate or cocoa, maple syrup, vanilla, fruits)
Mix DariFree according to instructions on package, using 20% more powder than usual for a creamier taste if desired. In a blender thoroughly mix all of the ingredients introducing some air into the mixture. Place mixture into a serving container and freeze, stirring every two hours. Ready for the kids after 3 to 4 hours in the freezer. Make it the night before for convenience!
Creamy Jello Dessert
8 serving package of Jell-O gelatin
500 ml Vances DariFree Regular Flavour
fruit chunks or pulp, if desired
Stir 500 ml boiling water into the jelly powder. Orange, lemon or pineapple jelly are favourites for this recipe. Then add 500 ml of DariFree. Mix well, add fruit, then let mixture set up for 2 hours in the refrigerator. The mixture will seperate into layers, creamy on the top, jelly on the bottom. Serve it as is or use an electric mixer to whip it until its smooth and creamy (if youre going to whip it, leave the fruit out until after whipping). Return to refrigerator until ready to serve.
As an alternative use grated carrots with orange jelly for a salad dish.
Medallion Muffins
250 ml Vances DariFree
1/4 cup shortening
1/2 cup sugar (or your favorite equivalent)
2 medium eggs or equivalent egg substitute
1 cup Gluten Free Flour (your favourite base and brand)
1/4 teaspoon Salt
2 teaspoons Baking Powder
1/4 teaspoon Vanilla
flavouring, spices if desired and appropriate for diet
Cream together sugar and shortening. Beat eggs into mixture. In a seperate bowl sift together the flour, salt and baking powder, then add to the egg mixture, alternating with adding the Vances DariFree. Dont overbeat (best by hand rather than using a mixer). Stir in vanilla and flavourings/spices. Pour into greased muffin tin or use paper muffin cups. Bake in 350 degree oven for 20 minutes or until a tooth-pick comes out dry. Makes 12 smaller muffins, 8 large ones.
Whipped "Cream"
This wonderful Whipped "Cream" Topping is quickly made with Flavor-Fresh. It piles high and tastes great!
1 cup Flavor-Fresh powder
1/2 cup Medallion Milk Skim Milk in liquid form
1/4 cup white sugar
1/4 teaspoon vanilla
Whip the first two ingredients in a chilled bowl until moderately firm (forms peaks). Then add in the sugar and vanilla and beat to desired firmness. Store in the refrigerator. The amount of sugar can be reduced if desired. Now....bring on the pumpkin pie!
